During Circuit Breaker, I challenged myself to eat healthier just to see if I could do it. And also, to satisfy my curiosity of whether these superfood work or not. I have always been skeptical even after reading SO many articles.
So, I went to google some superfood that can help me and I was shocked at how many of these I already have in my fridge.
Here are what I eat on a normal work from home day!
Breakfast is admittedly the most challenging meal just because I never had the habit of eating breakfast. Eating something at 9:30 in the morning does put a toll on my stomach so I usually will compromise and drink something as breakfast instead and eat later on in the day.
My first meal will usually be hot ginger tea. Ginger is known for its antioxidant & anti-flammatory properties. Drinking something hot in the morning will help to improve digestion and relieve congestion!
After that, I will do a small yoghurt bowl to snack on before I eat lunch!
In my yoghurt bowl, I normally put in lots and lots of fruits! Manuka honey and sometimes granola as well as chia seeds.
Manuka honey is good for acne-prone skin, additionally, honey also speeds up the healing process of your skin cells! Chia seeds are one of the richest sources for omega-3 fatty acids.
If you don’t know, Omega-3 fatty acids help provide building blocks for healthy skin cell function and new collagen production to keep the skin foundation strong and wrinkle free.
And the best thing about chia seeds is that it has no taste at all. Add it into your smoothie or yoghurt bowl and mix it up to eat! You won’t even notice it but you’ll still get all your nutrients.
My lunch is usually the heaviest meal (and the unhealthiest) but I try not to eat too much to prevent food coma. I will normally do a rice bowl mainly because it’s the easiest. Think: Korean bibimbap!
For my rice bowl, I’ll normally have rice, a choice of meat, bell peppers, spinach and avocado! I know it sounds weird and like you probably can’t imagine it but it’s really good.
I normally interchange between my meat and leafy greens to keep myself entertained.
If you didn’t know, bell peppers are really high in vitamin c which is really helpful in smoothing out your skin & lightening any dark spots! Spinach is rich in vitamin k which is really helpful in improving blood circulation and coagulation (aka blood clotting).
Since spinach is loaded with zinc which help to prevent acne breakouts!
Because my lunch is so heavy, I’ll normally have a light dinner again! To prevent indigestion, I’ll try to eat lesser rice and more vegetables.
For dinner, I’ll try to change my choice of vegetables from spinach to brussels sprouts to broccoli and because I love bell peppers, I will normally eat it for 2 meals hehe.
And… that sums up my diet for the entire day. Since this is something that will take time, it’s hard to see the results immediately so I will continue to try to eat healthier!
See you next week!
Xoxo,
Claudia.
